About me


Hi, I’m Nicole! I am a qualified clinical nutritionist, completing a Bachelor of Health Science (Nutritional Medicine) at Endeavour College of Natural Health in 2015.

My passion for human nutrition began when I started experiencing ongoing gastrointestinal issues after an illness. I tried conventional medicine including many years of pathology tests and examinations without resolution. I then started my own investigations, which led to formal study, and through the knowledge I obtained from my study I discovered I was a coeliac, I had fructose malabsorption, small intestine bacterial overgrowth (SIBO) and endometriosis. I have been gluten free and on a low FODMAP diet for the last 10 years, which has significantly improved my quality of life.

I started ‘Nourish The Gut’ as I believe that nourishing the whole body starts with optimal nutrition to support the gut. I bring to clinic a wealth of knowledge in food allergies and intolerances, particularly coeliac disease, irritable bowel syndrome (IBS) and fructose malabsorption. Other special interests of mine include weight loss and management, endometriosis and skin conditions (e.g. acne, dermatitis, eczema).


When I’m not in clinic I enjoy cooking, baking and redeveloping recipes to suit my coeliac disease and other intolerances. I also love everything to do with health – I keep up to date with recent research, I attend seminars and I am constantly acquiring and reading health-related books. I currently live in Melbourne, Australia with my husband, two teenage children and my furry friend Lukey.
